Cookware Materials
All cookware is not made of the same materials. The variety of materials can be overwhelming if you are shopping for cookware; however, I have provided a brief description of each material. Some materials are more costly as compared to others. Be sure you understand the benefits and negatives of each metal before purchasing a cookware set.
Be sure you research the various cookware options to make sure you get the best set for your needs and budget.Z
Stainless-Steel
- Made by adding chromium and nickel to steel
- Highly anti-corrosive
- Poor conductor of heat
- Does not react with acidic or alkaline foods
- Dishwasher, oven, and broiler safe
- Sometimes used to coat highly conductive metals such as copper and aluminum (known as stainless-steel “clad”)
Aluminum
- Excellent heat conductor, second only to copper
- Reacts negatively to acidic foods
- Works best when lined with a nonstick coating, clad with stainless steel, or undergoes anodization.
- Lightweight, it makes a good choice for larger pieces like water pots and roaster
Carbon Steel
- Cross between cast iron and stainless steel
- Needs to be seasoned similarly to cast-iron
- Should not be put in the dishwasher or allowed to sit in water
Nonstick
- Extremely easy to clean up
- Requires minimal amount of oil
- Do not use metal utensils; however, use hard nylon, silicone or wood
- Scratched surface causes it to not perform adequately
- Overheating pan can cause damage
- Must take extra care for it to last
Cast-Iron
- Poor conductor of heat, meaning it is slow to heat and slow to cool
- Excellent for dutch ovens, fry pans, griddles, and grill pans
- Very durable, resisting cracks, chips, and warping
- Requires user to “season” it to prevent rust
- Should not be put in the dishwasher
Copper
- Best conductor of heat out of all other materials
- Heats quickly and evenly
- Cools as soon as it is removed from the heat
- Can discolor or cause a metallic taste with certain foods
- Sometimes lined with tin or stainless-steel to avoid affecting foods apperance and taste
- Can be expensive because copper is a previous metal
Stoneware
- Oldest type of cookware
- Heats very evenly and holds heat well similar to cast iron
- Normally glazed baking dishes for oven use only
- Dishwasher and freezer safe
